Healthy Pasta Recipes To Delight Your Taste Buds!
When we started looking for healthy pasta recipes, we typically found recipes that used few vegetables, and were mostly noodles and cheese.
Part of our definition of healthy was using plenty of fresh vegetables, so Lisa went into her experimental mode, and came out with a
recipe that is chock full of vegetables and tastes absolutely wonderful.
Later, when Lisa was pregnant, we wanted to avoid dairy, so she came up with a
recipe that removed the cheese but kept the vegetables. It turned out to be very tasty, and just takes a little more care when moving the pieces from the pan to the plate.
We know that some vegetarians like to add tofu to most recipes, so we also have a
recipe for your enjoyment. It isn't our favorite, but if you're a tofu fan give it a try.
If you want even more vegetables in the lasagna recipes, you can add in 1 small onion and 1/2 cup of chopped swiss chard or kale to the vegetables when you sauté them.
Either of the lasagna recipes can be topped with a layer of bread crumbs. Great if you're having a party! Just combine 1/2 cup of bread crumbs with 2 tbsp. parsley and 2 tbsp. olive oil and mix well. Sprinkle on top of the lasagna after you remove the foil but before you bake it for the final 15 minutes.
