An oven preheated to 305° a large mixing bowl a square baking dish
Mix all ingredients in a large mixing bowl.
You'll want to lightly coat your baking dish with olive oil, just a touch to keep the cake from sticking. Pour all the batter into the baking dish, then bake at 350° for 20 to 30 minutes, until firm to the touch.
The cake is delicious warm, or can be cooled and stored in a sealed container for later.
For flavor, adjust the sugar and flax seed as needed. The orange peel can also be replaced with clove, nutmeg, or allspice if you'd prefer.
A low-fat version of this recipe can be made by using 1/4 cup applesauce and only 2 tbsp. olive oil in place of the 1/3 cup of olive oil.
